Soji Recipe – A Comforting Indian Dessert

Sometimes, the best comfort food is the one you make for others. A few days ago, my friend asked for my Rich Creamy Soji recipe because her family had been craving it. Unfortunately, she fell ill and couldn’t make it herself. So, I decided to cook it for her family, and they absolutely loved it!

Now, I don’t make this dessert often, but when I do, it’s always a hit. My Rich Creamy Soji is a recipe I created, and I use it occasionally to treat loved ones.

What is Rich Creamy Soji?

Soji (or Soojee) is a traditional Indian dessert made with semolina and lots of butter. It’s rich, indulgent, and perfect for special occasions. Often served at Indian weddings or religious functions, it’s traditionally made without eggs, giving it a soft, creamy texture. The consistency can be adjusted by the amount of milk used—less for a thicker texture, or more for a smooth, velvety finish.

Here’s the recipe :

Ingredients:

  • ¾ cup Taystee Wheat or Semolina
  • 125g + 25g butter
  • 2 pieces cinnamon stick
  • 3 cups milk
  • 1 tsp cardamom powder
  • 1 tsp almond powder
  • Few strands saffron (optional)
  • Few drops egg yellow food coloring (optional)
  • 6-8 tbsp condensed milk (adjust to taste)

Instructions:

  1. In a medium-sized pot, melt 125g butter on low heat. Add food coloring to the milk and set aside.
  2. Add cinnamon sticks and wheat to the butter and cook for about 5 minutes until it turns slightly brown.
  3. Remove from heat, slowly add the milk while whisking to avoid lumps, then return to heat. Be careful as it may splutter.
  4. Keep stirring until the mixture thickens and the butter separates around the edges.
  5. Add the remaining 25g butter, cardamom, and almond powder. Mix well, then add condensed milk. Remove from heat.
  6. Serve with a drizzle of fresh cream and a sprinkle of almonds, if desired.

Pro-tip for The Perfect Sweetness– For sweetening, I prefer using condensed milk. But, I don’t like overly sweet desserts, so I start with about six tablespoons and adjust as I go. Feel free to add more if you have a sweet tooth! A pro-tip: use a tablespoon to measure the condensed milk so you can control the sweetness to your taste.
